Roasted Broccoli Pasta

Y’all heard of the Yummly App? That thing is absolutely awesome! It shows you a whole bunch of different recipes, you can filter them according to your diet (such as vegetarian, vegan, gluten-free etc.) and also punch in certain foods you don’t like, so you only see recipes you would want to try out. Plus all the amazing pictures that come with the recipes really make your mouth water! Today for lunch I tried a recipe for pasta with broccoli roasted with olive oil and garlic. It’s totally easy to make, doesn’t take too long and doesn’t require any super special ingredient that you might not have around the house, so I wanted to share it with you!

Roasted Broccoli Pasta – prep time: 45 minutes

  • 8 oz. or 200g pasta (I like organic whole wheat!)
  • 1.5 lbs or 700g broccoli
  • 6-8 cloves of garlic (smashed)
  • 2 tbsp or 2-3 EL extra virgin olive oil
  • salt and pepper
  • fresh grated Pecorino Romano (Parmesan works too)

Preheat oven to 450° F or 200° C. Combine broccoli, garlic, oil and salt and pepper in a baking dish. (I added some onions because onions are awesome!) Roast for 20 minutes, tossing halfway through. Meanwhile cook pasta as instructed on package, reserve about 1 cup of noodle water before draining. Toss drained pasta with broccoli and add the noodle water as needed. Taste with Pecorino Romano or Parmesan. Enjoy! 🙂
