Green Chili Breakfast Quesadilla


Yep, I still haven’t come up with an alternative to sugared cereal that doesn’t involve major cooking in the morning (and I do consider blending a smoothie cooking!). Except for maybe oatmeal. After being done with pondering over what to eat, I was finally so hungry that I went all in for it. May I present: The Green Chili Breakfast Quesadilla!

Green Chili Breakfast Quesadilla

  • 2 whole wheat flour tortillas
  • shredded Mexican cheese blend
  • 2 eggs
  • green chili
  • onion
  • a slice of tomato
  • salt and pepper
  • oil for the pan

Scramble the eggs, adding green chili, onion and salt and pepper. In a greased pan pile up cheese, the scrambled eggs and diced tomato between two flour tortillas. Carefully turn over when tortilla is brown and crispy. Seriously, be careful if you don’t want the entire filling all over the stove. Good luck and enjoy! 🙂
